S'mores Crispies

August?  How is it August?  Where has the last year gone?  Where has the summer gone? 
Working, living, Couch to 5k-ing; staying busy sure makes the days fly by.
 
I'm not saying there are some beautiful days to come this summer, but what have I been doing all year?  Why haven't I had a s'more yet?  And how can I have some more if I haven't had any?
 
I have really got to get my priorities in order.


S'mores Crispies

Printable Recipe

You'll need...
4 cups graham cracker cereal
3 cups plus 1/3 cup mini marshmallows, divided
1 cup chocolate chips
2 tablespoons butter

Method...
Spray a 9x9 baking dish with nonstick spray, set aside.  In a medium saucepan over medium-low heat, combine butter and 3 cups of marshmallows and melt, stirring occasionally.  While this mixture melts, combine cereal, chocolate chips and remaining 1/3 cup marshmallows in large mixing bowl.

Once the marshmallow mixture is melted (this should take less than 10 minutes), pour over the cereal mixture and stir to coat.  Pour, press, and just general manhandle the mixture (it's going to be sticky), in to the prepared pan.  Allow to cool completely before cutting.  And when you're ready to cut, you're going to need a serious knife.  Cutting through graham cracker cereal with a butter knife is like... well, it's hard.

Makes 12-16 crispies, depending on how you slice 'em and you'll want to slice them small.

Gone are the days where you need a campfire or a gas stove to get your chocolate-y,
marshmallow-y fix.  These are your rainy day s'mores, your winter s'mores.
Or any time really, come on.
S'mores - they're what dreams are made of.
I'll confess, I've been known to eat marshmallows and chocolate chips.  Together.  And that's it.
Chocolate covered Peeps?  Don't even joke.
